Candied Yams

4 yams or sweet potatoes (3 pounds, 12 ounces each)
2 tablespoons margarine
1/4 cup granulated sugar
3/4 teaspoon of Sweet One® sugar substitute
1/4 cup each low-sodium chicken stock and bourbon (optional)
Fresh chopped or whole parsley sprigs for garnish


Pare and cut each yam in half lengthwise; cut each half into quarters. Place in a 4 quart pot with enough water to cover. Bring water to a boil; simmer for 20 minutes until yams are tender. Drain and cover with cold water; set aside.

In a 10-inch skillet, melt margarine over medium heat. Stir in Sweet One® sugar substitute and sugar and cook, stirring frequently until dissolved and bubbling. Stir in chicken stock and bourbon; bring to a boil.

Drain yams and carefully transfer to sauce. Stir to coat each piece of yam with sauce. Reduce heat and cover; simmer for 5 minutes until heated through. Serve immediately.
