Carrot Salad

(Makes 6 servings)

2 cups shredded carrots
1/2 cup minced green pepper
1/3 cup raisins
1/4 cup minced onion
1 small apple, quartered, cored and shredded
2-1/2 tablespoons cider vinegar
2 tablespoons vegetable oil
2 packets Sweet One
1/4 teaspoon celery seeds
1/4 teaspoon dry mustard powder

In medium-size bowl, combine carrots, pepper, raisins, onion, apple, vinegar, oil, Sweet One, celery seeds and mustard. Refrigerate until well chilled.

Per serving (1/2 cup): 103 calories, 1 g protein, 16 g carbohydrate, 5 g fat, 1 g saturated fat, 0 mg cholesterol, 15 mg sodium.

Diabetic exchanges: 1/2 fruit, 1 vegetable, 1 fat
