Sausage and Apple Frittata

1 medium onion, thinly sliced
1 large apple, peeled, cored and thinly sliced
6 ounces smoked turkey sausage, thinly sliced
3 packets Sweet One
Salt and freshly ground black pepper, to taste
1 cup egg substitute
2 large eggs
1/4 cup nonfat cheddar cheese

1. Spray a large oven-proof, nonstick skillet with nonstick cooking spray. Over medium low heat, cook onion with 2 tablespoons water until tender, about 4 minutes. Add apple and sausage; cook until apple is tender, about 3 minutes. Stir in Sweet One and salt and pepper to taste.

2. Meanwhile, whisk together egg substitute and eggs. Preheat broiler.

3. Pour eggs over apple mixture. Cook over medium-low heat 5 minutes until almost set. Put skillet in broiler for 1 to 2 minutes until completely set.

4. Sprinkle with grated cheese before cutting into 6 wedges to serve. Frittata may be turned out on a serving platter before sprinkling with cheese and cutting. Serve warm or at room temperature. Makes 6 servings.
