Banana-Pineapple Tea Ring
(Makes 16 servings)
2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon
baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup
vegetable oil
2 large eggs, separated, at room temperature
1 cup
mashed very ripe bananas
1 can (8 ounces) crushed pineapple in juice
1/4
cup walnuts, finely chopped
1/4 teaspoon cream of tartar
1 1/2 teaspoon of Sweet One® sugar substitute
Preheat oven to 350°F. Spray 10 inch tube or bundt pan with nonstick
cooking spray; set aside.
In large bowl, sift together flour, sugar, baking soda, cinnamon and salt. In
another large bowl, combine oil, egg yolks, bananas and pineapple. Stir liquid
ingredients into dry ingredients; stir in walnuts.
In large metal bowl with electric mixer at high speed, beat egg whites and
cream of tartar until soft peaks form; add Sweet One® sugar substitute and continue beating until
stiff peaks form. Fold egg whites into batter. Pour into prepared pan and bake
50 to 60 minutes or until wooden pick inserted in center comes out clean. Cool
in pan on wire rack 15 minutes. Remove from pan and cool completely.
Per serving (1 slice): 178 calories, 3 g protein, 23 g
carbohydrate, 8 g fat, 1 g saturated
fat, 27 mg cholesterol, 124 mg
sodium.
